If you could open any sort of restaurant, what would it be like?
Well, it would be vegetarian, of course. I can't decide between Italian - fresh, handmade pasta and pizzas (like a veggie version of the River Cafe) - or Indian. I'd use organic ingredients. We'd have our own kitchen garden for all the vegetables.
There was an excellent veggie Indian restaurant I used to go to in South London, with a much more imaginative menu than you usually find. There wouldn't be any alcohol, but beautiful, sweet and savoury lassi.
I was fortunate to work at Habitat in Tottenham Court Road, London, in 1967, where Terence Conran was introducing us to Elizabeth David cookbooks, Sabatier knives, le Creuset pans and much more sophisticated, exciting, cosmopolitain cookery than I had been brought up eating in post-war Northern England. I magine - I'd never tasted garlic or aubergines, let alone the food of other cultures.
