What wonderful timing!!! Just two days ago I was scouring the web for information on being vegetarian. Why? Well, I for years now I have been an unofficial veggie, but when I took refuge I became an offical one. I couldn't have picked a harder time to do it! In Ecuador and Mexico (I would imagine the rest of Latin American as well) being a vegetarian is considered unhealthy and downright weird. It's been a challenge, that's for sure. In Ecuador I ate lunch in the cafeteria with the children and the vegetarion option was usually rice with....rice. But knowing that I could afford to have an avocado and tomato sandwich stashed away in my bag and that this meal was probably the only thing that they would eat all day kept things in perspective.
Here in Mexico I have more options and have put all sorts of green things back into my diet. However, since the sister of the family I'm living with is a doctor, and the half of her friends who aren't doctors are very carnivorus, I've been hard-pressed to inteligently define my vegetarian lifestyle. So thank you for posting this, you've nicely expanded my list of reasons. :) Now I just have to translate them in to Spanish....

If you don't mind Sujatin, I'll add this other point that I found that shocked me:

"One acre of pasture produces an average of 165 pounds of beef; the same acre can produce 20,000 pounds of potatoes. If Americans reduced their meat consumption by only 10 percent, it would free 12 million tons of grain annually for human consumption. That alone would be enough to adequately feed each of the 60 million people who starve to death each year."
